Colourful and elegant, this appetiser is imbued with so much French style it almost floats on the plate as a heavenly work of Art. It’s a Ceviche of spicy salmon with creamy cucumber, a worthy entrée to any gourmet dinner. The airy texture of the salmon is similarly expressed in its lightweight presentation that’s delicate and sophisticated. The Atlantic salmon is imbued with Makrut lime, passion fruit, chilli, lemongrass, green apple and cucumber to form its refreshing blend that’s pleasing to both the palate and the eye.

 

Wine Companion:  Try the bone-dry Gris Blanc  rosé from Gerard Bertrand with this. Nice fruitiness balanced with good acidity, from one of Europe’s best wineries.
