Another example of sublime French cuisine with an unaccountably English name, the Dover Sole flatfish actually hails from the seas of the North Atlantic and Mediterranean, nowhere near the famous White Cliffs, so it can perhaps justifiably claim a soupçon of French provenance. It has flesh that’s easy to fillet with a mild, buttery and sweet flavour, and this simple dish uses nutmeg and lemon juice to bring out these taste characteristics. Served with butter sauce and mashed potato, this is a decidedly French take on a classic fish dish.

 

Wine Companion:  I’ll have a Chablis with this any day. Go with the Maison Louis Michel, very reasonably priced and good quality for the money. Crisp minerality and a clean finish.
