Adding a contemporary, international twist to the classic tom kha soup, imported salmon and straw mushrooms are gently cooked in coconut milk infused with lemongrass, kaffir lime leaf, coriander leaf, chilis, shallots, lime juice, fish sauce and the fragrant galangal from which the dish gets its name.
