Latest Recipe's Lon Bpoo, a delicately flavourful simmered crab dish, demonstrates in each small bite what happens when you prepare only the finest ingredients with fanatical attention to detail. Fresh crab is cooked in a coconut broth which lends mild sweet notes. Tamarind and palm sugar add extra sweetness and complexity while shallots, chilis, coriander root, garlic, black pepper and salt provide the perfect flavour and spice. In regular Thai cuisine, these ingredients and their inedible parts are often left in the broth but the royal recipe calls for these to be strained out, leaving just the heavenly flavoured crab meat served alongside steamed vegetables to leave just a bit of satisfying crunch.

Wine companion: A creamy Chardonnay comes to mind when crab is on offer and the resort has a nice Rawson’s Retreat Chardonnay on its wine list with a fresh melon aroma.
