Seafood is truly the star here being lightly seasoned with nothing but salt, pepper and olive oil, and cooked over a simple charcoal grill. The Best of Samui features fillet of seabass, squid, scallops and prawns all fresh from the sea served alongside grilled veggies and creamy mashed potatoes like you’ve never tasted before (they’re made with coconut milk instead of dairy and absolutely delightful). Optional, but highly recommended, is the chef’s special saffron and white wine sauce that gives the seafood a delightful tang and wallop of flavour. Sitting on the open air terrace overlooking the waters below, you really are getting the best of Samui. 

Wine companion: A Loire Sauvignon Blanc such as Sancerre or Pouilly-Fumé works with seabass. Zazen has French ownership so expect a super selection including the 2014 Domaine Blondelet Pouilly-Fumé with clean acidity and ripe, fleshy fruit.
