Ancient Thai cuisine is alive and well at JW Marriott Phuket Resort & Spa, where Chef Tham presents his Taste of JW Ancient Wild cooking class at Ginja Cook Restaurant. It’s a culinary journey to unearth the wild flavours of Phuket’s rainforests and fisheries, sustainably sourced and perfected down through the centuries.

Guests step into Phuketian culture with visits to the fresh market at nearby Khok Kloi in Phang Nga, a sustainable prawn and fish farm, and mangrove swamps where black crabs are caught. The half-day programme concludes with guests using some of these ingredients to prepare three rare local dishes under the keen direction of Chef Tham.
