This classically chic pastry delight is true to Le Méridien’s French heritage, but this being Bangkok, it’s given a Thai spin to align it somewhat with its local environment. Hence the delight of mango flavour blending with melt-in-the-mouth pastry. The delicate mango cream filling is prepared by whisking up egg yolk, sugar and cornflour, adding warmed-up mango purée and lemon juice and cooking together before cooling down and adding soft butter for another whisking, to create a dreamy, creamy texture. East meets west, in a palate-tingling encounter.
