Classic French cuisine is replete with desserts that are light and flavourful, but it’s soufflés that somehow lead the way in being fluffy yet fulfilling. This banana soufflé is typical; deceptively simple in preparation, but with an outcome jam-packed with presence. Its list of ingredients is small: ripe bananas, honey, egg white, sugar and butter. The skill in blending them together, however, and the swift efficiency of baking them to perfection in just 10 minutes is what makes this particular soufflé one to cherish.

 

Wine Companion:  I am tempted to pair this with the sweet Bussaba  from Granmonte winery in Khao Yai. This winery is under the helm of Thai winemaker Nikki Lohitnavy and is now recognised as one the best wineries in Thailand. If you want to try Thai wine, theirs will be a good choice.
