In keeping with Chiva Som’s ethos of healthy spa living, this classic French soup drops its usual calorie-laden character for a more lean and lightweight guise. Fat-free and protein-full lobster meat is the central ingredient, but there’s no room for heavy cream usually associated with bisque-style soups. Instead, olive oil and vegetables form a soup stock, with lobster shells added for a piquant boost. It’s quickly prepared in a matter of minutes, strained and completed with the chilled lobster meat for a fresh and healthy bisque alternative.

 

Wine Companion: We’re careful not to overwhelm this delicate dish, so I suggest the Capital Foscarino Soave from Anselmi. Garganega grapes produce this lovely gold-coloured wine, which is aromatic and very ripe.
