It’s de rigueur in contemporary fine dining to serve small delicate bites that give the diner just the right amount of each flavour, ingredient and texture and to present each bit as an equal feast for the eyes. This practice has long been a staple of Royal Thai cuisine, making the Nine Treasures Miang prepared by Chef Pim Techamuanvivit at nahm work as both a royal dish and a modern gastronomic showpiece. The original dish is mentioned in none other than Rama II’s Epic of the Verse of Foods, and namh’s version features lobster and chicken, shavings of tart green mango, sweet and sour snake fruit, and aromatic herbs served on an edible thonglang leaf. The take on a beloved Royal Thai dish does credit to this Michelin-starred restaurant.

Wine companion: Fitting with nahm’s Thai cuisine is a Thai wine. The award-winning Monsoon Valley, White Shiraz, Hua Hin Hills, is a medium bodied rosé which pairs nicely with the various ingredients.
